Evening Grace comes from Colombia and is decaffeinated with the sugarcane process, also called ethyl acetate or EA decaf. The solvent used is naturally derived from fermented sugarcane, and it gently lifts the caffeine while keeping the bean's natural sweetness. It removes more than 99 percent of the caffeine, which puts Evening Grace inside the FDA decaf standard. The sugarcane process is known for a sweet, round cup rather than the flat, hollow flavor that some decaf coffees produce. We air-roast Evening Grace to a medium development that holds the milk chocolate depth and pulls out the orange and brown sugar sweetness. The fig and pecan notes round out the finish so the cup feels complete rather than thin.
