Grocery store coffee is usually sold by a best-by date that is twelve to twenty-four months out from roasting, which means the bean you grind on Tuesday morning could have come out of the roaster a year ago. Specialty roasters take the opposite approach and print the actual roast date on the bag, because the flavor curve of roasted coffee is short and steep. The day a coffee is roasted, it is too gassy to brew well. Five days later, it is approaching its peak. A month later, it is still good but fading. After six weeks, even airtight storage cannot stop the slow oxidation that makes coffee taste flat and papery.

The supply chain for grocery shelf coffee adds months between roasting and brewing. A typical sequence is: roast, package, ship to a regional distribution center, ship to a regional grocery warehouse, ship to a store, sit on the shelf, get carried home, sit in the cabinet. Each stage adds time. By the time the bag is opened, the coffee is often three to six months past roast, and many bags are even older. The coffee is not unsafe to drink, but the aromatic compounds that make specialty coffee taste like chocolate, fruit, or florals have largely dissipated.
