About this origin
Tarrazú is a coffee-growing region in the Los Santos Zone of Costa Rica, southeast of San José. It is considered one of the country’s premier coffee regions. The terrain is steep and mountainous, with farms sitting between 1,200 and 1,900 meters of elevation. Cool nights and rich volcanic soil help produce dense, slowly maturing cherries with concentrated sweetness.
Tarrazú coffees are often washed-process, but this lot is natural-processed. That means the coffee cherry dries around the bean before the fruit is removed. The extra contact between fruit and seed helps create the star fruit and strawberry tasting notes in the cup.
We air-roast this Costa Rican Tarrazú coffee to a darker development that builds body and brings out milk chocolate and almond depth, while keeping the fruit notes present instead of roasting them away.
From Nick, head roaster: Tarrazú is the coffee I reach for when I want a bigger, more confident cup. The chocolate carries through, the fruit notes keep it from feeling flat, and it holds up well to milk or espresso-style preparation.
