Why This Coffee Stands Out
Yirgacheffe is the birthplace of coffee, and this lot exemplifies why the region is legendary. The natural processing—where cherries dry whole in the sun—creates that distinctive berry sweetness you can't get from washed coffees. Hand-sorted at peak ripeness and shade-grown under native Ethiopian trees.
We roast this to a medium level to preserve the delicate fruit notes while developing the chocolate body. The result is a cup that's complex enough for pour-over enthusiasts but approachable for anyone who appreciates good coffee.
Best Brewing Methods
- Pour Over – The ideal method to experience the full range of fruit and floral notes. Medium-fine grind, 2:30-3:00 brew time.
- French Press – Brings out the chocolate body and creamy texture. Coarse grind, 4 minutes steep.
- Drip / Auto – Makes a reliably delicious pot. Medium grind, filtered water recommended.
