About Nick Murphy — His Word Coffee Roaster

Who Roasts Your Coffee

Every bag of His Word Coffee is roasted by hand in Vancouver, Washington. Behind each batch is Nick Murphy, co-founder and roaster. He and his wife Rachel started His Word Coffee to share something simple: great coffee and genuine community.

Nick and Rachel live in the Portland metro area with their two daughters. When they are not roasting or packing orders, you might find them at a local farmers market or serving fresh cups from the coffee trailer at community events.

The Roasting Journey

Nick roasts on a Coffee Crafters fluid-bed air roaster, a fluid-bed (air) roaster. Unlike traditional drum roasters that tumble beans over a hot surface, fluid-bed roasters suspend the beans on a stream of hot air. Every bean gets even heat from all sides.

What does that mean for your cup? A cleaner taste with less bitterness and no smoky residue. The natural flavors of each origin come through clearly. Whether you like a bright, fruity Ethiopian or a smooth, chocolatey Colombian, air roasting lets those flavors shine.

Why Air Roasting

Most roasters use drum machines. They work fine. But Nick chose a fluid-bed air roaster because fluid-bed roasting removes the chaff (the papery skin on coffee beans) during the roast instead of letting it burn. That means no ashy undertones in your cup.

Air roasting also gives more control over each batch. Small adjustments to airflow and temperature let Nick bring out the best in every single-origin lot. It takes patience and attention, but the result is a noticeably smoother, more flavorful coffee.

The His Word Coffee Mission

His Word Coffee is built on three things: craft, faith, and community. Every bag is roasted to order in small batches so it arrives fresh. The name reflects a faith-forward approach to business, rooted in gratitude and service rather than sales pitches.

With over 30 events served from the coffee trailer, Nick and Rachel have built real relationships across the Vancouver and Portland area. From church gatherings and weddings to farmers markets, the goal is always the same: share a great cup and a warm conversation.
