We started His Word Coffee because we believed two things could go together without apology: coffee worth slowing down for, and a clear sense of why we do it. We are Nick and Rachel Murphy, and along with our two daughters we run this roastery as a family.

Coffee runs deep on my side of the family. My grandfather grew up in Montana's Bitterroot Valley, and a good pot of coffee was part of how that house started every morning. That memory is a big reason we do this work the way we do, with patience and attention to the cup in front of us.

This is not a side hustle or a label slapped on someone else's product. We roast every bag ourselves on our own equipment, we taste what we sell, and our faith shapes how we treat customers and the people who grow our coffee.

We roast on a fluid-bed air roaster. Heated air lifts and suspends the beans through the whole roast, so the heat reaches every bean evenly and the chaff blows clear instead of scorching back into the batch. In our cupping we find this gives us a cleaner, brighter cup that tastes more like the origin and less like the roast.

Why We Air Roast in Small Batches

Most coffee is roasted in a drum, where a metal cylinder turns over a flame and the beans tumble against hot steel. Air roasting works differently. On our fluid-bed air roaster, a stream of hot air lifts the beans and keeps them moving, so they never rest against a hot surface. That gives us a few real advantages we taste in the cup:

  • Even heat. Because the beans are suspended, the heat reaches each one from every side. We get a more uniform roast across the batch with fewer scorched or underdone beans.
  • Cleaner flavor. Chaff, the papery skin that comes off as beans roast, blows clear of the batch instead of burning back in. We find this keeps the cup brighter and removes a layer of smoky bitterness.
  • Control. Small batches let us watch each roast closely and adjust as the beans develop, rather than running large loads on a fixed program.

We buy specialty-grade green coffee, which the Specialty Coffee Association defines as coffee that scores 80 points or higher on its 100-point cupping scale. Starting with better beans is the part of quality that happens before the roaster ever turns on. From there, the roast is our job, and we taste every coffee before it goes on the shelf.
